Joel got the recipe from his Swiss Chef when working at the Les Continents Restaurant of the Intercontinental Hotel, over 30 years ago. It was believed this was the original Cafe de Paris butter created by the Bistro of the same name in Geneva, Switzerland, founded in 1930.
